Lime and Cilantro Chicken Marinade

I made a chicken marinade earlier this week Jared has now declared his favorite. Lucky for me it's really easy and can be used for baking or grilling.

Marinade will cover four chicken breasts.  Here's the recipe:



  • 1 bunch of cilantro, chopped
  • zest and juice of one lime
  • 1/3 cup olive oil
  • 1 teaspoon ground cumin
  • 1 teaspoon brown sugar
  • 1/2 teaspoon kosher salt
Put all ingredients in a large Ziploc bag and shake to mix.  Add chicken breasts and shake/massage marinade into chicken.  Let sit in fridge until ready to cook (but at least 30 minutes).


Tonight this is going on skewers with venison, peppers, onions and squash and grilled for kabobs.
